SUMMARY
Under the direction of the Processing Supervisor, processes all raw and smoked products.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Completes all start-up and shut-down procedures for all processing areas.
Grinds, blends, and final grinds all raw materials to be used in processing.
Loads and unloads, cooks and records weights for smokehouse.
Completes required forms and properly applies thermometers and probes.
Understands the procedures for hanging smoked meats.
Assembles Weiler grinder and mixer/blender on a daily basis for processing.
Weighs all materials according to each product specific formulation with no underweights and +1 pound max overweight and documents on each product specific batch card.
Weighs spices and water and documents on batch cards according to each ground batch
Understands the mixing and grinding procedure to prepare the product for stuffing.
Observes product appearance and changes plate or knives accordingly.
Understands smokehouse operations which include start-up, weights and loading of wood, placing of thermometer probes, checking each cycle and documentation.
Adheres to all HACCP requirements for all CCP’s and correctly completing all required forms.
Washes, scrubs and sanitizes machines and all areas according to sanitation schedule.
Observes safety and security standards.
Qualifications
QUALIFICATIONS
Education and/or Experience
One to two years’ of food manufacturing experience preferred
Food Handler Certification required...Southside can assist you in obtaining this
Language Skills
Ability to understand English for all job-related circumstances.
Mathematical Skills
Ability to add, subtract, using whole numbers.
Reasoning Ability
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
Physical Demands
While performing the duties of this job, he/she is frequently required to stand; walk; use hands to finger, handle, or feel; and talk or hear. He/she is regularly required to reach with hands and arms. He/she must occasionally lift and/or move up to 50 pounds. Exposed to heat and cold temperatures throughout the work day.
Work Environment
The noise level in the work environment is usually moderate to loud.
